Building Sustainable Local Agricultural System Capacity through Farm to Institution Planning

Lakewood Health System (LHS) is an independent, integrated, rural healthcare system in Staples, Minnesota. LHS will address local economic and human development through the creation and implementation of a long-term local food purchasing program. Lisa Myslajek, an Environmental Horticulture and Organic Methodologies graduate student in the College of Food, Agriculture and Natural Resources Science, worked with local farmers and LHS officials to create an implementable plan that addresses costs, prices, logistics and transportation, and incorporation of local products into LHS menu planning. The results are being used to inform implementation of a farm to institution program.
